In a medium-sized saucepan, melt together peanut butter, honey, and coconut oil.
Remove from heat. Pour 1/3 of the mixture into a small glass rectangular pan (about half the size of a 9x13 pan) and place in refrigerator until hardened.
Meanwhile, add mini chocolate chips and crispy rice to the remaining peanut butter mixture.
Stir until combined and chocolate chips are melted.
Spread chocolate mixture on top of set peanut butter layer. Refrigerate until hardened and cut into squares.
Store in refrigerator.
