Chicken Fried Rice

CHICKEN-FRIED-RICE-2

This recipe is a new staple at our house.  It tastes better than takeout and is much healthier, too.  You control the amount of oil and it uses brown rice for extra fiber.  It uses ingredients that most would already have on hand, and it is a recipe that the whole family loves and gets excited about.

It is super convenient to have a whole meal in one, as it contains protein from the meat, fiber from the brown rice, and even has your serving of vegetables. The recipe calls for uncooked chicken breast, but if you have leftover, already-cooked chicken, use that and make this meal SUPER easy!

For an extra special meal, try serving this with my Baked Vegetable Egg Rolls.

CHICKEN-FRIED-RICE

Chicken Fried Rice

3 cups cooked long-grain brown rice (preferable leftover rice)

3/4 lb boneless skinless chicken breasts, diced into 3/4 inch pieces

1 Tbsp sesame oil, divided

1 Tbsp canola oil (or coconut oil) divided

1 1/3 cups frozen peas and carrots blend

3 green onions, chopped

2 cloves garlic, minced

2 large eggs

3 Tbsp low- sodium soy sauce

Salt & Freshly Ground Pepper

Directions

In a large non-stick wok or skillet, heat 1 1/2 tsp sesame oil and 1 1/2 tsp of canola/coconut oil over medium-high heat.  Once hot, add chicken pieces, season lightly with salt and pepper and salute until cooked through, about 5-6 minutes. Transfer chicken to a plate and set aside.

Return skillet to medium-high heat, add remaining 1 1/2 tsp sesame oil and 1/12 tsp canola or coconut oil.  Add peas and carrots blend and green onions and salute 1 minute, then add garlic and salute 1 minute longer. Push veggies to edges of pan, add eggs in center and cook and scramble.  Return chicken to skillet along with rice.  Add in soy sauce and season with salt and pepper to taste.

Weekly Update

 

If you read my post titled ‘Facing the Clutter In That One Dreaded Room,’ you know, thanks to my daughter, I’ve been a busy bee decluttering! I often get bit by the decluttering bug in the Fall. I feel like I’m preparing to nest with cooler weather on the way. I cannot nestle in and relax when I have clutter looking at me every time I try to walk into my bedroom!

I’ve also been busy creating some really exciting things, but I just can’t tell you about them yet! I’m hoping I can reveal my secret by the holiday season…maybe end of October? Until then, my lips are sealed, but I’m just giddy. That’s all I’m going to say about that.

Also, raise your hand if you have been putting off appointments that benefit your health. My hand is raised! I am due for teeth cleaning, (done!), I need to reschedule an Oncology appointment, oh…and that lovely yearly exam we ladies just love!

Anti-Procrastination Weekly Update

 

You will notice there are no “new obsessions” below this week. I think that is due to this mindset I’ve found myself having this summer – minimal, minimal minimal. Right now my new obsession is to get rid of the unnecessary. I have 5 bags of stuff, packed into my trunk to be unloaded at our local thrift store.

It has been a bit crazy adjusting to a new summer schedule, but I keep self- talking, reminding myself to slow the mind in the midst of busy summer schedule. It really works, this self-talk. Often it comes with a deep breath which automatically slows and my eyes open to all the amazing blessings that surround me. I then find my thankful.

I’m getting into a summer rhythm of working on this blog from 6:30-noon, then I turn my attention to my teens and their needs for the day. Today their need is to be with friends and go to Grandpa & Grandma’s po0l, and boy does that sound good to me! My car will soon be filled with giggling teen girls, pool towels and ice cream. Hello summer!

Anti-Procrastination Weekly Update

My trip to California was so amazing. Thank you to those who followed along on Instagram and commented your delight for me in all that I experienced. I came back absolutely in awe of God’s creation and His love for me shown through beauty and the love of my sweet friends who I stayed with all week.

The day after I arrived back home, I had my every 3-month injection and my 6-month oncology checkup. My doctor checked for lumps and bumps and found none. I always breathe a sigh of relief after seeing my Oncologist and having her capable hands check me over. I’m eager to hear how my blood work looks. The injection set me back this week, as it always does. It is jolting, to rid the body of all hormones and set me into artificial menopause. I feel it both physically and mentally. It usually takes a good week to get back into the swing of life and start feeling myself. I think it was extra rough this time due to jet lag, coming down from the high of a wonderful vacation, and very little sun. I am starting to feel my easy joy, hope, faith and energy coming back so I’m eager to start this week!

Best way to drink lots of water

Bubba Envy Vacuum Insulated Tumbler

There is just something about drinking super cold water with a big ol’ straw! I’ve been drinking more water than ever lately thanks to my new Bubba Envy Vacuum Insulated Tumbler. It keeps ice for over hours, has a large, easy- to- remove lid, fits easily under my ice dispenser and ALL of the ice goes right into the tumbler instead of on my floor!  It has a silicone base pad to keep it from slipping and fits perfectly in my car drink holders. I take it everywhere!

Ongoing Obsessions

Kindle Fire

This ongoing obsession with my Kindle Fire is not letting up. I especially love using it in the evenings when tucked in bed. It’s like my own perfect sized, personal television. Before I indulge in watching Netflix or Amazon Prime shoes,  I make sure I read at least a chapter or two of whatever book is on my Kindle. I love using the same device to both read and watch. It is going to come in very handy on my flight to Cali!

Essential Oil Diffuser

Still using it daily and love it! The Aromatherapy Essential Oil Diffuser by AromaSoft is amazing for getting the scent out into larger rooms. It is priced very reasonably and works so well! After buying 4 other diffusers, I did some research, read a ton of reviews, and bought this one. I’m so happy I did!

We divide our grocery budget according to how many weeks are in the month. This week’s groceries fell on the last week of April so I need to be a bit frugal this week. Whatever amount I go over in the previous weeks of the month come out of the following weeks budget, so by the time we get to the last week of the month there is usually not as much left as the first week.

Because of this, our meals this week will be pretty basic, buy yummy!

Weekly Update

Books, books and more books. I can’t get enough lately. Back-to-school gives way to a hint of fall and I find myself buying candles named Marshmallow Fireside, curling up with a fuzzy blanket and books…lots of books.

I’m on the last chapter of  Love Warrior and just bought it 3 days ago. I need to chew on it, but I feel it has changed me. I have 3 cookbooks from the library with post-it notes curling out from the edge marking the recipes I want to make, 2 of which I share below from The Naked Cookbook by Tess Ward. I want this cookbook to be mine. I’m so drawn to the minimalist cover, exposed spine, beautiful photography and stripped-down- to- goodness recipes. I plan on making her Flax & Pumpkin Seed Gluten Free Bread & Turmeric Milk, both recipes are linked below.

Goodbye Olympics

We have had such a great time watching the 2016 Olympics. We are actually watching them right now as I type. Even though they are over, we recorded hours of it and are still enjoying every bit of it. My two older girls are either too busy or not interested, but my Avery, Todd and I have spent almost every evening watching them together. Todd and Avery have had lots of fun laughing at me gasping and reacting to all the great and tense moments. I think the Olympics are emotional! I love it.

Todd has had to work late almost every evening while they are on, and it became a habit of his to text me one word as he leaves work and begins his drive home.  “Olympics?” I always respond with a hearty “Yes!”

I’m going to miss those one word texts from my man.
